Born in Ireland, raised in Essex. I have a no-nonsense approach to business, with the expertise and passion to help you reach your highest aspirations and unlock your full potential in the hospitality industry.

My unique experience gives me the knowledge and expertise to consult on start-up projects, forming brands, and implementation of hospitality technology as well as day to day operations, labour & food cost controls and maximising sales.

I am also uniquely internationally placed with offices in London and Manila. I can offer UK businesses support launching in Manila and S/E Asia as well as the know how to bring exciting new brands in Asia to the UK market.
Operational
Experience
Starting as a Chef in 1993 at my local 4 Star hotel I progressed through the ranks working up through the kitchen brigade to Head Chef before switching to Front of House. By this time I had firmly established myself in casual dining sector having worked with three successful and respected high street brands.
Working with some of the industry’s most influential leaders, my experience saw me progress into General Manager & Senior Area Manager levels in operations and other hospitality sector projects.

Since 2015 I have been instrumental in two UK start up brands. From early planning stages, through to launch and onto profitability. I have also worked as an Operations Director on a major business turnaround project.
​
Most recently I was Operations Director of Marugame Udon (Europe) Limited where I headed up the Operations, Food, People and Technology departments. In this role I led a team from the outset of the European joint venture being formed through to the first site opening and onto lead a fast roll out of 11 sites in and outside of London, in 15 months as well as preparing the business for Franchising opportunities.
